My Homemade Vegan Mayonnaise & Various Salad Dressings

Things you will need:

  • Blender or Submersible Blender


  • Aquafaba from Chickpeas
  • Clean Neutral Oil


  • Bring all Ingredients to Room Temperature
  • Put the Aquafaba into a blender, or in a flat-bottomed, straight-sided cylindrical glass, ceramic, or steel, container if using a Submersible Blender
  • Add a few drops of Vinegar or Choice to the Aquafaba & Mix very well til slightly thickened, 30 seconds or so.
  • Drizzle a small amount of the oil into the blender or container several drops at a time with one hand, while blending vigorously, moving to corners well.
  • Continue until you see an emulsion has formed
  • After you see the Oil Combining and becoming thick, you can start drizzling drizzling the oil in a very thin and very steady stream, never too fast. Stop and scrape down sides occasionally.
  • If the mixture becomes too thick to mix, add in a tiny amount vinegar to thin it out just enough to be able to mix it well.
  • Continue adding oil, and thin with vinegar whenever it gets too thick
  • When all the oil is beaten in, adjust the consistency of the Mayonnaise with vinegar, until its not too thick
  • Add a few drops of Lemon Juice to balance the tartness out, but not too much
  • Adding too much Vinegar or Too much Lemon Juice may “break” the Mayonnaise
  • Add Kosher Salt & White Pepper to taste
  • Add in any other desired ingredients (Dry mustard, Dijon Mustard, Dry Chili Powder, Dry Seasonings, Worcestershire sauce, Chili sauce, etc..), and blend well.
  • Be sure to keep unused portion Refrigerated

Now you can add whatever you want to the mixture, Here are some Variations, to add to some of your Vegan mayo:

1000 Island Salad Dressing:

  • Chopped Sweet or Dill Pickles
  • A little Pickle Juice
  • Finely Minced Shallot
  • Finely Minced Green pepper
  • Finely Minced Red pepper
  • Organic Ketchup
  • A little Chili Sauce
  • Add some Plant Milk, if desired (optional)

Special/House Sauce:

  • Organic Ketchup
  • Chopped Sweet or Dill Pickles
  • A little Pickle Juice or vinegar
  • A little Chili Sauce (optional)

Ranch-House Dressing:

  • Thin mayonnaise (or part Mayo & part Plain Unsweetened Plant Yoghurt), with Unsweetened Plain Plant Milk
  • Add A little Vinegar – To Taste
  • A Little Lemon Juice – To Taste
  • Chopped fresh or Dried Parsley, or other Dried herb such as Marjoram, Sage, or Savory
  • Finely Minced garlic cloves,
  • Finely Minced Green Onion
  • Finely Minced Chives (optional)
  • Coarse Black Pepper

Chili Dipping Sauce / Spicy Sauce:

  • Add generous amount of Spicy Sambal Chili-Garlic Sauce or Sriracha to Mayonnaise
  • Add Finely Minced Garlic
  • Add Finely Minced Green Onion

Specialty-Seasoning Custom Sauces:

  • Heat a small amount of oil in a pan
  • Add in your own Dried powdered Seasonings, such as dried herbs, Sichuan pepper, 5 spice, turmeric powder, Powdered Cumin, Chili Powder, etc
  • Stir it for 30 seconds to let it “bloom”
  • Stir it into the Mayonnaise
  • Add other ingredients like Vinegar, garlic, taste

Fresh Tomatillo or Chipotle So-Cal Taco Sauce:

  • Bloom some Cumin and Chili Powder in a little oil on the stove
  • Stir it into the mayonnaise
  • Add Finely Minced Cilantro
  • Add Finley Minced Garlic
  • Add Finley Minced Green and Red Chili Pepper (can be roasted and peeled first)
  • Add Vinegar
  • Add Finely Minced Green Onion
  • Add Ground Black Pepper
  • Add some Lime juice, or lemon if no Lime juice is available
  • Pureed, cooked, cooled Tomatillos or minced Chipotle

Tartar Sauce, for Fish & Chips:

  • Add Lemon Juice
  • Chopped Sweet or Dill Pickles
  • Pickle Juice
  • Finely Minced Onions
  • Finely Minced Fresh or Dry Parsley (optional)
  • Chopped Capers (optional)
  • Caper Juice (optional)
  • Dijon Mustard (optional)
  • Spicy Chili-Garlic Sauce (optional)
  • Minced Chives (optional)

Dijon Horse-Radish Sauce:

  • Add a little mayonnaise to Dijon or other robust Mustard
  • Add Prepared Horse-Radish
  • Add Worcestershire (Optional)
  • Add Vinegar, to taste
  • Finely minced Garlic (optional)

Caesar Dressing:

  • Add Olive Oil
  • Vegan Fish Sauce
  • Worcestershire Sauce
  • Minced Garlic
  • Chopped Capers
  • Caper Juice or Vinegar
  • Lemon Juice
  • Crushed Black Pepper
  • Grated Vegan Parmesan Cheese
  • Coarse-Ground Black Pepper

Blue Cheese Dressing:

  • Crumble in vegan Soft Blue Cheese
  • Add extra Vinegar
  • Worcestershire Sauce
  • Add plant milk to get the right thickness
  • Dijon (Optional)
  • Finely Minced Garlic (Optional)
  • a little spicy Sauce or Seasoning (Optional)

Creamy Italian Dressing:

  • Bloom soft Italian herbs like Oregano, marjoram, etc.. in a little olive oil on the stove
  • Mix into the mayonnaise
  • Finely Minced Garlic
  • Finely Minced Fresh or Dry Parsley
  • Thin with a bit of Olive Oil, and extra vinegar, mostly Balsamic Vinegar
  • Add a little Red Chili powder to the herbs when blooming on the stove (optional)
