Kalani’s Hawaiian Granola

Granola

Preparation:

  • Roasted Ingredients:
    • Oats, rolled, or lightly-rolled like you find in some countries
    • Chopped Macadamia Nuts ( or Cashews, Pecans, or Sliced Almonds)
    • Desiccated Coconut, Shredded or Unsweetened Coconut Shredded
    • Unsalted Sunflower Seeds, raw
    • White Sesame Seeds, raw
    • Wheat Germ
    • Other Raw, Unsalted Seeds: Pumpkin, Flax, Hemp, etc.
  • Liquid Mix:
    • Ingredients:
      • Real Maple Syrup with Dark Brown Cane Sugar Added, around 1:1
      • If using Light Brown Sugar, add a touch of Molasses
      • Some Maltose/Agave/Brown/Rice Syrup/ or some Honey
      • Clean & Light Salad Oil / Avocado Oil / Grapeseed Oil / Coconut Oil / Canola Oil etc
      • Cinnamon
      • Natural Vanilla
  • Non-Cooked Ingredients:
    • Dried Bananas
    • Dried Papaya, chopped
    • Dried Pineapple, chopped
    • Dried Mango, chopped
    • Any Other Dried Fruit
      • Apricots, chopped
      • Assorted Raisins
      • Dried Blueberries
      • Dried Cranberries
      • Dried Cherries, chopped

Procedure:

  • Boil the liquid mix together until well-combined, set aside to cool
  • Preheat Oven to 375F
  • Combine all Dry Roasted Ingredients in a bowl and toss well until uniformly mixed
  • Pour in the Cooled Liquid Mixture, and Stir and Toss well, until everything is slightly moist, and nothing is left dry.
  • Spread out about 1″ thick on large baking sheets & bake in oven
  • When tops begin to brown, remove pan and stir around and put back in the oven
  • Repeat process until everything is uniformly golden brown
    • Its sometimes easier to just turn out the entire pan into a large mixing bowl, if you have a very large one, then toss quickly and re-pan & return to oven.
    • In the Above picture, I used the very large clear plastic salad bowl thats nearly 3 ft across, and filled these two 6″ Half Hotel pans
  • Allow Granola to cool completely.
  • Add in the chopped dried fruit and mix well to combine.
  • Store sealed air-tightly
